Who we help and how

There are five varieties in the collection, each with a Spanish landscape of its own behind it: rosemary, lavender, mountain wildflower, heather and orange blossom, also known as azahar. Azahar is gathered while the Mediterranean orange groves are in bloom; its aroma is delicate and floral, and it suits soft cheeses, fresh fruit and light desserts. Heather and lavender honey go with mature cheeses such as Manchego and with meat dishes, while for every day a spoonful of honey in Greek yoghurt with walnuts is all you need. The honey here is never overheated and nothing is added to it, so it stays alive: it thickens, its texture changes, and the aftertaste opens up gradually, the way a good wine's does. A perfectly clear jar is often taken as a mark of quality, when in fact it is more likely a sign of artificial honey.

How the work goes

The apiary is near Benidorm, in Polop de la Marina; how best to receive your order is something to arrange with them directly. Over time the honey thickens and crystallises, which is perfectly normal for honey that has never been overheated. If you want it runny, stand the jar in a bath of warm water and keep the temperature no higher than 40 degrees, otherwise the honey will lose the very qualities you bought it for.

Why trust us

The Ecos del Panal apiary and shop were founded by Claudia Grau Fuster. It all began with a search for roots: going through the family tree, the family found an old beekeeping tradition and decided to revive the craft, this time in Spain. "We don't rush the process, we don't overheat the honey and we don't add anything else to it. We simply respect the rhythm of the bees," say the founders. The apiary has been featured in SunClub Network magazine.
